tagliatelle con carciofi

Ingredients for 4 people

  • 400g tagliolini
  • 3 artichokes
  • 1 lemon
  • 1/2 glass of extra virgin olive oil
  • salt
  • pepper
  • grated Parmigiano Reggiano cheese

Remove the tough outer leaves from the artichokes, rub with lemon, rinse, cut into fine slices and place in a saucepan with the oil, two or three glasses of water and a little salt and pepper. Cover and cook the artichokes until all the water has evaporated. Cook the tagliolini “al dente” in boiling salted water and drain.

Place in a warm serving dish, and mix in the artichoke sauce at once, sprinkling with grated Parmigiano Reggiano cheese. Stir vigorously and serve.
