tagliatelle alla bolognese

Ingredients for 4 people

  • 400g tagliatelle
  • 200g minced beef
  • salt
  • 50g bacon
  • 1/2 an onion
  • 1 small carrot
  • 1/2 a stick of celery
  • 2 tablespoons tomato paste
  • 1/2 a glass of red wine
  • 100g grated Parmigiano Reggiano cheese
  • stock
  • extra virgin olive oil
  • 1 knob of butter
  • salt
  • pepper
  • 3 or 4 garlic cloves (optional)

Chop the onion, carrot, celery, and the bacon separately. Brown the bacon with a few tablespoons of oil and the knob of butter; add the vegetables and soften in a covered pan. Add the minced beef and mix until browned; sprinkle with the wine, add the cloves (optional) and allow to evaporate. Add the tomato paste and a little hot stock, with salt and pepper; reduce the heat, cover and continue cooking for about 2 hours, stirring from time to time.

Check to ensure stock does not dry while cooking and if necessary, add more hot stock. Cook the tagliatelle in plenty of boiling salted water,
drain when cooked “al dente”, arrange in a warm serving dish and pour over the prepared sauce adding grated Parmigiano Reggiano cheese to taste.
