rigatoni ai quattro formaggi

Ingredients for 4 people

  • 400g rigatoni
  • 100g Gorgonzola cheese
  • 100g Fontina cheese
  • If Fontina cheese is not easily accessible, try Asiago (soft style) as a replacement.
  • 100g Taleggio cheese
  • 150g of Grana Padano cheese
  • 1 glass of single cream
  • 100g butter
  • salt
  • pepper

Chop the Gorgonzola, Fontina and Taleggio, grate half of the Grana Padano. Put the cheeses in a large pan with the butter, add a little salt and pepper.Melt all ingredients over a low heat, stirring well. When the cheeses have become creamy, add the glass of cream and keep warm.

Cook the rigatoni in plenty of boiling water for the required cooking time and drain. Quickly put the pasta in the pan containing the creamed cheeses, toss over a moderate heat for one or two minutes. Sprinkle with the remaining grated Grana Padano. Arrange in a warm serving dish and serve at once.
