farfalle agli asparagi

Ingredients for 4 people

  • 400g pasta bows
  • 400g asparagus
  • 90g butter
  • nutmeg
  • 60g grated Grana Padano cheese
  • salt

Trim the asparagus, preserving only the most tender portion of the tips. Divide these into medium-sized pieces, toss into boiling salted water, boil for about 2 to 3 minutes and drain.

Bring plenty of salted water to the boil, then toss in the pasta bows. Melt the butter in a large frying pan and when it begins to fizz, but before it changes colour, toss in the prepared asparagus pieces, lowering the heat to minimum. When the pasta has cooked “al dente”, drain and add at once to the frying pan. Mix in the Grana Padano cheese and season generously with nutmeg.

Mix until the pasta has combined with the asparagus evenly, then remove to a pre-heated serving dish and serve with grated Grana Padano cheese to be sprinkled on individually.
