bucatini all’ amatriciana

Ingredients for 4 people

  • 400g bucatini
  • 1/2 an onion
  • 150g bacon
  • 2 tablespoons
  • extra virgin olive oil
  • 300g tomatoes
  • salt
  • hot chilli peppers
  • 80g grated Pecorino Romano cheese

Chop the onion with the bacon and place in a frying pan with two tablespoons of extra virgin olive oil. When golden but not brown, add the peeled tomatoes to the pan, chopped and with seeds removed. Season with salt and plenty of chilli pepper, then test to adjust seasoning if necessary (remember that the bacon is already salted); continue cooking on a high heat for a few minutes, until the tomato mixture is cooked, but not mushy.

Cook the bucatini in plenty of lightly salted water and when “al dente”, drain and mix with the prepared sauce and the grated Pecorino Romano cheese.
